Big Game Day, Miniature Snacks ...... 02/3/18
It's the day before the big game so I'm sharing with you a favorite game day snack: potato skins! These mini ones are perfect for traveling, so if you are taking them on the road just make sure to wait and add the sour cream till you arrive at your destination or they may look a little messy. Presentation is key when bringing food items for guests you may or may not know ;).
Most of you probably don't know this but I love to cook/bake and try new recipes in my spare time. I find it very relaxing but also another great creative outlet for myself. What do you guys like to do to unwind? These mini potato skins are actually surprisingly easy to make. They only require 6 ingredients (some you may already possess), and they take less than 2 hours start to finish. So what are you waiting for? Get your snack and game day on! Ingredients:
1-1 1/2 lb. baby red potatoes
1 tbsp olive oil
1 cup sharp cheddar cheese, shredded
6 bacon slices, cooked & crumbled
1/2 cup sour cream
chopped fresh parsley
Step 1- Preheat oven to 425 degrees F. Clean potatoes and make sure they are completely dry. Place them in a large bowll and toss them with the olive oil. Arrange them on a parchment paper lined baking sheet. Bake them for 20 minutes until tender. Take them out and cool them on baking sheet for 30 minutes.
Step 2- Slice potatoes in half lengthwise and scoop out the potato flesh. Increase oven temp to 450 F. Place the skins face down (hollow side down) on baking sheet. Bake for 10 minutes. Flip them over and bake again for 8 minutes or until crispy.
Step 3- Fill potato skins with the cheddar cheese and then top with bacon crumbles. Because the sheet will still be warm, cheese may melt a little but this OKAY! Bake them finally for 1 minute in oven for all cheese to melt at 450 F. Let them stand for 1 minute. Add a dollop of sour cream to each potato skin and garnish with parsley, chives, or an herb of your choice!
Step 4- ENJOY!
